The experience
You arrive at Lanta Thai Cookery School and start with a short tour of the on-site garden to see the Thai herbs and spices grown there. Then a local chef walks you through the fundamentals (how flavors work, how to balance heat and acid) before you move to the open-air kitchen. The group chooses four dishes together from a menu of ten, and you pick your own protein type and spice level for each one. Lunch classes offer Tom Yam, Phad Thai, Green Curry, Panang Curry, Thai Beef Salad, Fried Rice, Stir-Fried dishes and Bua Loy. Dinner classes include Chicken Satay, Spring Rolls, Golden Bag, Papaya Salad, Steamed Fish, Seafood in Tamarind Sauce, Massaman Curry, Larb and Sticky Rice with Mango.
You cook alongside the chef, not watching a demonstration. The class handles knife work, paste-making, timing and heat: the techniques that separate restaurant food from home cooking. Everything you prepare is yours to eat when the cooking finishes, served in the peaceful tropical setting of the house. You take home printed recipes and a certificate, and any leftovers pack up to share later.
Hotel pickup runs between Saladan and Kantiang Bay. If you're staying elsewhere, public transport is nearby or a driver can collect you for 200 Baht per person (payable directly). Children aged 7 to 11 choose two dishes instead of four. On Thursdays, you can add a guided market visit to shop for fresh ingredients before class: that option is available only that day.
