The experience
The class starts at the local market, where you walk through with your chef to see how locals shop and learn what goes into the dishes you'll cook. You pick out fresh ingredients yourself (part of understanding how Lanta's food works), then head to the kitchen. The three dishes change by day: Monday brings deep-fried prawn spring rolls, fried rice chicken in pineapple, and beans in syrup; Wednesday swaps in golden pouches and stir-fried noodles; Saturday offers shrimp shaped like birds and Chiang Mai noodle soup. Each one teaches you a different technique, from frying to stir-frying to the sweet finishes Thai desserts need.
You cook alongside the master chef and a small group, no more than twelve people, so there's room to ask questions and get hands-on help. The kitchen has gas and knives, which is why children need to be at least nine years old. Everything is customizable: tell the chef if you want vegetarian, vegan, spicy or mild versions, and they'll adjust. After you finish, you eat what you made, get a welcome snack and fruit, and walk away with a recipe book and a certificate. The whole thing takes 4.5 hours, and the school covers your ride to and from your hotel.

Is this one for you?If you're staying in Koh Lanta without a car, the included pickup means you don't need to arrange transport to the school or the market. The class handles both. The small group size keeps the pace manageable and gives you real time with the chef, so you leave knowing how to make these dishes again, not just having watched someone else make them.
