The experience
You'll tie on an apron in an equipped kitchen a few steps from the Galatea or Italia subway stops and spend three hours learning to make four dishes that anchor Sicilian vegan cooking. The chef walks you through fresh pasta alla Norma, sweet and sour caponata, bruschetta with basil pesto and cherry tomatoes, and Sicilian vegan cannolo: each one built to replicate at home once you leave Catania. You handle the prep and the cooking. The kitchen supplies the professional equipment and all the ingredients you need.
Once the last dish is plated, you sit together with the other people in your group, never more than sixteen, and taste everything you've cooked. A glass of Sicilian wine comes with the meal, and you'll leave with a participation certificate. The class works in English or Italian depending on who's in the room that day.
