A hands-on cooking class in Arenella, Sicily where you make fresh pasta from scratch, prepare a seasonal appetizer, and cook a Sicilian dessert under the instruction of Teresa, who grew up in Syracuse learning family recipes. The lesson runs about two and a half hours in a villa kitchen near the beach; the menu changes daily and can be adapted for vegetarians and children over six. You eat everything you make, paired with local wine.

The Experience

Teresa teaches in her kitchen in Arenella, a beach zone twenty minutes by car from Syracuse. You arrive and start making three traditional Sicilian dishes—fresh pasta (ravioli, busiate or cavatelli, depending on the day), a seasonal appetizer with vegetables or a meat or fish dish, and a Sicilian dessert made with the region's fresh ricotta, or almond cake, pistachio cake, cannoli, or a fruit option. The lesson is practical and hands-on; you learn new techniques while working with fresh, seasonal ingredients. Local flours used in the class contain gluten.

The cooking itself takes about two hours. Teresa shares stories about the ingredients and the recipes as you work—curiosities about Sicilian food that turn the class into something you'll want to tell people about when you get home. If you're vegetarian or have foods you don't eat, let her know when you book and she'll adjust the menu. Children under six don't pay; if kids are cooking with you, the recipes stay simple enough to keep pace with their speed.

After the lesson, you have time to relax and enjoy what you've made, all accompanied by local wine. If you want to shop for ingredients with Teresa before class, an optional guided market walk through Ortigia starts at 8:45 a.m.—an hour-long tour of the market with tasting and explanation of what's sold there.
