The experience
You arrive at an equipped kitchen lab a few steps from the Galatea or Italia subway stops. The pizzaiolo sets up your station with flour, yeast and all the ingredients you'll need, then walks you through the fundamentals: how to mix and knead the dough, the timing that makes it rise, the techniques that give it structure and flavor. You'll prepare a classic Pizza Margherita, then create your own variations, vegetarian versions on request, choosing toppings and learning why certain combinations work. Everything happens hands-on. You're not watching a demonstration.
Once your pizzas are ready, they go into the oven. While they bake, you watch the pizzaiolo perform a show cooking focused on Sicilian cannoli: how to fill the traditional pastry shells with fresh ricotta using the authentic local method. It's a working lesson in technique, not theater. Then you sit down to eat the pizza you made, sharing the table with the other participants in what the operator describes as a cheerful, convivial atmosphere. Sicilian red wine and limoncello come with the meal.
The class runs 2.5 hours and accommodates between 2 and 16 people. A guide leads the session in English or Italian. Children are welcome from age 6. If you have celiac disease or a severe flour allergy, this class isn't suitable because of the shared kitchen equipment and the flour dust inherent to pizza-making.
What’s included
- Use of professional kitchen equipment in the equipped laboratory.
- preparation of various types of pizza with typical Sicilian products and preparation of typical Catanian Scacciata.
- light lunch or dinner with the dishes you prepared.
- Sicilian wine and limoncello.
- show cooking demonstration of Sicilian cannoli with fresh ricotta tasting.

Is this one for you?The class is hands-on from the start (you're kneading dough and shaping pizza, not observing), so it works best if you're comfortable getting flour on your hands and standing for most of the 2.5 hours. Groups stay small enough that the pizzaiolo can watch each person's technique, which means you'll get real feedback, not a rushed overview.
