The Experience
I still smell the coffee from the tiramisu on my fingers. We’d just walked up those old steps in Trastevere — the kind of building where you hear neighbors talking through open windows — and suddenly we were inside Ilaria’s kitchen. She greeted us with this quick, warm smile, like she’d known us forever. There were only six of us, so it felt more like visiting a friend than joining a class. Ilaria started us off with flour everywhere (honestly, I got half of it on my shirt) and stories about her grandmother’s tricks for pasta dough. She showed me how to knead until it “feels like your earlobe” — which made us all laugh, but it actually works.
We took a break for aperitivo — little bites and a glass of red that tasted way better than anything I’d ever picked out at home. The window was cracked open, so you could hear someone playing guitar down the street, and there was this faint smell of basil from the counter. When we got back to rolling out fettuccine, Ilaria kept an eye on everyone but never hovered. She let me mess up my first ravioli (“too much filling,” she said, grinning), then helped me fix it without making me feel silly. At some point I forgot I was in someone else’s house.
The best part? Sitting down together at her table — mismatched chairs, plates stacked high with pasta we’d made ourselves, everyone passing bread and pouring wine for each other. Someone asked about her family’s recipe for cacio e pepe, and she told us about Sunday lunches growing up in Rome. It wasn’t just about food; it was about being let into something real, even if just for one night. Walking out later into the Trastevere evening (full and maybe a little tipsy), I realized I’d remember that kitchen light for a long time.
