Someone slides a cold glass into my hand before I’ve even taken off my jacket — bright orange, fizzy, smells like oranges and something herbal. Aperol spritz, obviously. Our chef, Martina, grins at the group and says “Salute!” and just like that, we’re all laughing together even though half of us only met five minutes ago. The kitchen’s windows are open and you can hear Rome outside — scooters, a church bell somewhere, someone yelling “andiamo!” down the street. It’s not quiet but it feels good.
We get flour everywhere right away. Martina shows us how to make pasta dough from scratch (I definitely cracked my egg weird but she just winked). There’s this moment where your hands are sticky and you’re not sure if you’re doing it right — then suddenly it comes together and you’re rolling out fettuccine with strangers who are starting to feel like friends.
