The Experience
You walk into the kitchen and chef Christian is already there, pasta machine set up on the counter, flour waiting. This isn't a lecture — you're making fettuccine, gnocchi and cavatelli by hand, three completely different techniques in one afternoon. The gluten free flour comes from Magnifico, a local supplier, and everything you touch is designed around that constraint, which turns out to be the whole point. No shortcuts, no substitutions, just the real method adapted properly.
The course moves through each pasta type in sequence. You'll knead, roll, cut and shape, using the Italian pasta machine and the accessory kit provided — the tools matter more than you'd think when you're working with gluten free dough, which behaves differently and needs a steadier hand. Chef Christian walks you through the physics of it: why the water-to-flour ratio shifts, how the dough tells you when it's ready, what texture you're actually aiming for. It's hands-on the whole time, not a demonstration you watch from a stool.
After you finish making the pasta, you sit down and eat it. The menu includes a bruschetta to start, then your three fresh pastas dressed with sauces from the restaurant's typical Roman and Italian menu — you choose which sauce goes with which shape. There's a house dessert or fruit salad to close it out, plus water and soda throughout. The whole experience is gluten free, so if you've been managing that restriction for years, you're not navigating around someone else's menu or worrying about cross-contamination in the kitchen.
Before you leave, you get a 10% discount on anything in the Magnifico store — the same place the course sources its flour and ingredients. It's a small detail, but if you've found a brand of gluten free pasta or baking supplies that actually works for you, being able to stock up at a discount makes the trip practical, not just memorable.
What’s included
Your afternoon includes all ingredients for three types of gluten free pasta, use of the pasta machine and accessory kit, a full lunch with your freshly made pasta dressed in your choice of Roman sauces, bruschetta, a house dessert or fruit salad, bottled water and soda, plus a 10% discount on products from the Magnifico store.
