The Experience

Casello is where the milk arrives and the cheese begins. You'll stand in the brine room while cheesemakers explain how they process the milk and work the curds by hand: the part that separates Parmigiano-Reggiano from everything else. The guide walks you through each step, from cooking to aging, and before you leave the factory you taste the finished cheese with a glass of wine.

The tour then moves to the Parma Ham factory, where the process starts with fresh pork legs and moves through salting, resting, washing, drying, curing, greasing and branding. You see each stage, then taste the ham paired with wine. The whole tour takes about five hours from pickup. You can choose the location nearest your accommodation from the available options.

A professional driver and guide handle the transport in an air-conditioned vehicle. Gratuities are optional. If you want only the cheese factory and morning timing, the Parmigiano-Reggiano 10:00 option lets you skip the ham factory and book a shorter visit.
