The experience

Panzerotti and puccitedde are fried dough dishes that have been made the same way for generations in Puglia, each one seasoned differently and built from few ingredients but the right technique. The class teaches you both: how to shape and fry panzerotti filled with mozzarella and tomato from the garden, and how to prepare puccitedde topped with tomatoes and herbs, or with capocollo and stracciatella. You'll also make a typical regional dessert. The host and their parents guide you through each step in English or Italian, and the whole group works together in their house a few kilometers outside Ostuni.

Once the cooking is done, you sit down to eat what you've made. Lunch or dinner is served with a bottle of wine shared between every two people (either a Fiano white, or a Primitivo red or rosé) plus still and sparkling water. The meal is where you taste the panzerotti and puccitedde properly seasoned, and the dessert you prepared, all at a table with the family who taught you.

Let the host know about any food allergies or intolerances when you book. The household has a cat, so mention it if you have animal allergies. Wine is served only to guests over 18. Children and non-drinkers are welcome at the meal with other beverages.

Yes. Ticket types: Youth (14 to 17 years); Child (4 to 13 years); Infant (under 4): free.

What exactly are panzerotti and puccitedde?

Panzerotti and puccitedde are traditional fried dough dishes from Puglia that started as poor-kitchen food and have been made the same way for generations. Panzerotti are fried pockets filled with mozzarella and tomato sauce. Puccitedde are fried dough topped with tomatoes, herbs, and sometimes meat, each one seasoned in its own way. Both rely on technique more than ingredients.

Do I need cooking experience to join this class?

No. The class is designed for both adults and children, and the host and their parents teach you step by step. You'll learn the traditional method for shaping and frying both dishes, which is the skill that matters most.

What happens after we finish cooking?

You sit down together for lunch or dinner and eat the panzerotti, puccitedde, and dessert you just made, with wine and water. The meal is part of the class, not separate from it.

Is this class held in Ostuni itself?

The class takes place in the host family's house in the countryside a few kilometers from Ostuni, not in the town center. You'll be welcomed there by the host and their parents.
