The experience
You arrive at the Masseria and start with a walk through the farm itself: the guide shows you the wheat fields, explains how grain moves from sowing through harvest to the mill, and grounds the pasta you're about to make in the soil it comes from. Then you move to the work table. For the next hour or so, an expert teaches you step by step how to roll and shape orecchiette, the ear-shaped pasta that is one of Puglia's signature dishes. You work with flour grown on the property. The guide watches, corrects your hand position, and shows you the small details (the pressure, the angle, the timing) that separate a rushed shape from the real thing.
When the pasta is done, you sit down to lunch. What arrives is what you made, dressed with tomato sauce, alongside a tasting of the farm's extra virgin olive oil, focaccia from Bari, burrata from a nearby dairy, sliced capocollo from Martina Franca, local organic wine and a SlowFood biscuit from Ceglie. Water is included. The menu has a vegetarian base. If you have dietary restrictions, let the operator know when you book so they can adjust what you eat.
