The experience
The class arrives at your accommodation or holiday home. A local chef brings the ingredients and walks you through the techniques for three distinct pasta shapes that anchor Pugliese cooking: orecchiette (the small ear-shaped pasta), tagliatelle (the ribbon), and a stuffed egg pasta filled with radicchio, ricotta and speck. You make each one with your own hands, learning the tricks and proportions you can replicate at home. For each pasta, you also prepare its sauce: cherry tomato and caccioricotta for the orecchiette, fresh tomato and Parmesan for the tagliatelle, sage butter and pecorino for the stuffed pasta.
Once the cooking is done, you sit down together to taste everything you've made. The meal includes the three pastas you prepared, a focaccia and local cheese appetizer, and a puff pastry with lemon cream for dessert. The whole experience takes four hours and happens in the vineyard on the property. There is no toilet service during the class, so plan accordingly.
