The experience
The morning starts at Porta Carini, the entrance to Capo Market, at 10:30 am. You walk through the market with the chef to select the fresh ingredients for the day's cooking: olives, cheeses, produce and fish or meat depending on what you've chosen. This is not a tour of the market. You are shopping for what you will cook, so you see what goes into the food and understand the seasonal rhythm that shapes the menu.
The cooking happens in Palazzo Asmundo, a 17th-century palazzo across from the Cathedral, where you prepare three dishes: an appetizer of local olives, cheeses and Monreale bread with extra-virgin olive oil, a pasta course (busiate with pesto trapanese is on the seasonal menu), and cassata, the traditional Sicilian pie with ricotta cream. The menu changes with the season, so what you make depends on what is fresh. You also make limoncello during the class, using lemons the chef grows near the Nebrodi park.
At the end you receive a certificate signed by the chef and a small bottle of the homemade limoncello to carry home. A glass of wine is included with the meal.
