Then you move to the cooking school and make three dishes from scratch: arancine (crispy rice balls filled with ragù and peas), handmade maccheroni for Pasta alla Norma with eggplant and salted ricotta, and traditional cannoli with crunchy shells and sweet ricotta filling. The class runs about five hours, and you finish with a three-course Sicilian meal with wine, Marsala wine or soft drinks, depending on what you choose. The Pasta & Gelato option is shorter and narrower in focus. You make fresh egg pasta dough from scratch, shape two traditional pasta types and pair them with seasonal sauces you taste as you go.
