You shape the dough and bake your own pizza in a wood-fired oven.

A pizza-making class in Palermo where you learn from a master pizzaiolo and cook traditional Margherita and sfincione pizzas in a wood-fired oven. The chef walks you through the history, ingredients and technique (buffalo mozzarella, Sicilian tomatoes, flour choice), then you make the dough, shape it, watch it bake and eat it with Sicilian wine.

The experience

If you've got a free afternoon in Palermo and want to do something with your hands instead of just walking around, this is the class that fills it. You work alongside a pizzaiolo known across the city for both traditional recipes and new ones built on Sicilian ingredients. The session runs about two and a half hours, and you're making real pizza the way it's made here, not a tourist approximation. The chef explains the history and tradition as you go, talks through why the flour matters, why the mozzarella is buffalo, why the tomatoes are Sicilian cherry, and you get to feel how the dough actually behaves when you work it.

You make two traditional pizzas: Margherita and sfincione, the Sicilian version. After you shape them, they go into the wood-fired oven and you watch the whole cooking process from inside the pizzeria. Then you take them out yourself, sit down, and eat what you made with a glass of Sicilian wine. The class includes a bottle of water at the table and a shot of limoncello after. A tour guide who speaks English is there the whole time to help with technique and answer questions about what you're doing.

What’s included

  • One pizza per person.
  • one glass of Sicilian wine or soft drink.
  • bottle of water at the table.
