You're stepping into the former Guinness Power Station in Dublin's Liberties district, where Roe & Co Distillery now operates in what used to be one of the city's most recognizable industrial buildings. The space itself is part of the draw — high ceilings, original brick, the kind of place that feels like it's been waiting for a second life. Your guide walks you through how the distillery works, the grain, the aging, the whole process that turns raw ingredients into something you'll actually want to drink.
Then you pick your path. The Blending experience puts you in Room 106, where you're not just tasting whiskey — you're building your own Whiskey Old Fashioned, learning how the five pillars of flavor work together and why one drop changes everything. Or you go the Flavors route, which is less about making something and more about identifying what your palate actually responds to, mapping your taste profile against what Roe & Co produces. Both options take the same amount of time, so it's really about whether you want to leave with something you made or something you understand about yourself.
After the workshop, you settle into the Power House Bar with a signature Roe & Co serve — this isn't a rushed tasting-room pour, it's a proper drink in an actual bar, and you've got time to sit with it. The whole experience runs a few hours, and it's English-language only, so there's no translation lag. You need to be over 18 with valid ID, and the space is fully wheelchair accessible if that matters for your group.
