Li was already grinning when we met outside Roe & Co Distillery — she’d just learned the Irish word for whiskey (“uisce beatha”) from our guide, Ciarán. I tried to say it too (definitely butchered it), but he just laughed and handed us our first sample. The place still smells faintly of malt and something sweet, like the walls remember every batch brewed here. Ciarán knew half the staff by name; he waved to someone behind the bar who nodded back with that easy Dublin warmth.

We wandered through the old Power House where the windows caught this soft, grey light. There’s something about walking through the Whiskey Triangle that makes you feel like you’re part of some long-running story — cobblestones underfoot, a bit uneven, so wear good shoes. At one point, we stopped outside the Brazen Head (supposedly Ireland’s oldest pub) for photos. Some local guy in a flat cap gave us directions without being asked, then joked about tourists getting lost “chasing spirits.” Not sure if he meant ghosts or whiskey.

The highlight was up at the Guinness Storehouse — you get to skip the line, which is honestly a relief because it gets busy. Inside, standing at the bottom of this huge glass atrium shaped like a pint (I didn’t expect it to be so dramatic), Ciarán pointed out Arthur Guinness’ 9,000-year lease. The place buzzed with people but somehow felt personal; maybe it was the way our guide told stories about his granddad working here years ago. Tasting that fresh pint up in Gravity Bar while looking out over all of Dublin… I still think about that view whenever I see a can of Guinness back home.
