You're standing in Da Sy, a village outside Hanoi where blacksmiths have been forging blades for centuries, and you're about to make one yourself. The workshop is small, crowded with hammers and tongs and a forge that glows orange-red. Your artisan—a woman who has spent 44 years perfecting this craft—hands you a piece of metal and a sketch you've just drawn. This is where the knife-making class begins, not with theory, but with the thing itself.

You start by designing your blade on paper, choosing the shape and length that feels right in your hand. Then comes the forging: heating the metal in the forge until it's soft enough to work, cutting out the blade and tang (the part that slides into the handle) with traditional tools, and taking turns with the artisan to hammer it into shape. The hydraulic machine smooths the rough edges, but most of the work is yours—the hammer, the anvil, the rhythm of strike and turn. It's harder than it looks and slower, and your arms will feel it. The artisan watches, corrects your grip, shows you how to read the color of the metal to know when it's ready.
