The Experience
The class starts at the biggest market in Hanoi, steps from the old quarter where the school sits. Your guide walks you through the stalls to learn what each ingredient is, where to find it and how to recognize quality—spices, produce, the things that make Vietnamese food work. That knowledge sticks with you for the rest of your trip when you're shopping on your own or eating at a restaurant and wondering what you're tasting.
Back at the school, you cook the five dishes yourself: banh xeo (the sizzling pancake with beef and prawn), pho cuon (fresh spring rolls), bun suon chua (pork rib noodle soup), chicken and banana blossom salad, and either banana ice cream or egg coffee to finish. The guide is there the whole time, showing technique and answering questions as you work. If you're vegetarian, every dish has a vegetarian version—same methods, different proteins and produce.
When the cooking is done, you sit down with your classmates and eat what you made, with Vietnamese rice wine and light refreshments included. You leave with a cookbook, a certificate, and the actual ability to cook these dishes at home—not just the memory of watching someone else make them.
