The Experience

You walk into a modern café in central Hanoi and the smell hits you first—dark roasted Robusta beans, the kind Vietnam exports more of than any country except Brazil. A local barista is waiting. Around you, five or six other people are setting up at a shared table with phin filters, small metal cups, condensed milk, and egg yolks lined up like ingredients for something you've never tried before. This is where the next 60 to 120 minutes happen, and it's not a lecture. You're going to brew six different Vietnamese coffee styles yourself, starting with the simplest one and building toward the strangest.

The barista walks you through black coffee first—just Robusta beans and the phin, that metal drip filter that looks like it belongs in a chemistry lab. You grind, you pack, you pour hot water and wait. It's slower than you expected, and stronger. Then comes egg coffee, the one Hanoi is famous for—whipped egg yolk and sweetened condensed milk folded into hot coffee until it looks like tiramisu on top of a cup. You make your own.
