The Experience
The van picked us up just outside our hotel in Patong — honestly, I was still half-asleep and almost forgot my sunglasses. Our guide, Pim, greeted us with this huge grin and somehow remembered everyone’s name by the time we reached the local market. The air there was thick with lemongrass and something sharper (galangal maybe?), and I kept bumping into baskets of chilies. Pim handed me a kaffir lime leaf to smell — I’d only ever seen it dried before. She explained how these little things make all the difference in real Thai cooking. I tried to repeat the name for holy basil but she laughed — apparently my accent means “crazy pants” in Thai. Not my best moment.
Back at the cooking school, it felt cooler inside — fans whirring, sunlight bouncing off metal bowls. We got to choose four dishes each from this big menu (I panicked a bit but went for tom yum gung, green curry chicken, pad thai, and mango sticky rice). Each of us had our own little station; no fighting over spatulas or anything. The chef showed us how to pound curry paste by hand (my arm still aches) and how to balance sweet-salty-sour-spicy so it actually tastes right. There was this moment when the smell of coconut milk hit the hot pan — sweet and smoky at once — that made me weirdly hungry even though I’d just eaten breakfast.
