You arrive at your hotel pickup, get driven to the cooking school in Phuket, and spend the morning learning to make Thai curry paste by hand, then cooking four or five classic dishes at your own station. If you book the market-tour version, you visit a local market first to taste exotic fruits and select fresh ingredients. You eat everything you cook for lunch, take home leftovers and printed recipes, and return to your hotel by early afternoon. The whole thing costs one price—transport, ingredients, lunch, and instruction included.
The class starts early, before the heat settles in, and you're handed an apron and a mortar and pestle—the real tools, not the shortcuts. Your chef, fluent in English, walks you through making curry paste from scratch, grinding the paste the way it's been done for generations, no MSG, no pre-made jars from the market. You do the grinding yourself. It takes longer than you'd think, and your arm gets tired, and that's exactly the point—you'll remember how to do this at home because your hands learned it, not just your eyes.
If your class includes the market tour, you leave the kitchen mid-morning and head to the local market with your guide, stopping to taste fruits you've never seen before—mangosteen, dragon fruit, things with names you can't quite hold onto. The vendors know the chef. You pick out some of the ingredients you'll use later, and the whole thing stops feeling like a class and starts feeling like you belong there. Back in the kitchen, you cook four or five dishes depending on which course you've booked: Tom Yum soup, pad Thai, a curry (red, green, or Massaman, depending on the day), maybe pineapple fried rice or fish cakes. Everything you make, you eat. You sit down to lunch with what you've cooked, and whatever you can't finish, you take home in a container.
The recipes get emailed to you afterward—all of them, with notes and substitutions for ingredients you might not find where you live. The kitchen is clean, air-conditioned, and you get your own station, not crammed in with ten other people. Free transport runs from Kata, Karon, Kata Noi, and from Patong, Rawai, and Naiharn if you're on the market-tour version (minimum two people for those pickups). Bottled water is unlimited, and they bring you a welcome herbal drink when you arrive. Coffee and tea throughout. By the time you leave, you've got recipes, you've got muscle memory, and you've got the kind of story about Thailand that actually sticks.
