The Experience

You walk in and there's a glass of Cava waiting. That's how the Cooking Clubhouse starts — not with a lecture, but with a welcome. The class runs hands-on, which means you're at your own cooking station in pairs, sleeves rolled up, working through four tapas that each come from a different corner of Spain. Gambas al ajillo from one region, chistora a la sidra (that Basque chorizo cooked down in apple cider) from another, mejillones tradicionales, pimientos de piquillo stuffed with tuna and béchamel. The chef moves between stations, answers questions, keeps the wine flowing. It's not a performance you watch — it's a kitchen you're actually in.

The cooking part takes up the first half. You're making real dishes, not simplified versions, and the chef doesn't rush you through it. Once everything is plated and ready, that's when the social part kicks in. Everyone moves to a private dining room and sits at one long table together. The four tapas you cooked come out first, then the chefs bring a seasonal main course (fish or meat, depending on the time of year) and a Catalan cream mousse for dessert. That's six courses total.
