The experience
You arrive in Lucca's walled center and spend four hours in a kitchen learning to make dishes rooted in generations of Tuscan cooking. A local chef guides you through each course hands-on: you build an antipasti trio with panzanella and crostini, shape tordelli, Lucca's signature ravioli, and coat it in a slow-simmered meat ragù unique to the region, sear a pork loin wrapped in pancetta with roasted potatoes, and finish with cantuccini, the crunchy almond biscuits traditionally dunked in vin santo. The instruction weaves in the stories behind each dish, not just the technique.
After you've cooked, you sit down to eat everything you've made. The class is small and personalized, built around what you're learning rather than a fixed group size. If you have dietary restrictions, let the chef know in advance and the menu adjusts to fit your needs. The space is wheelchair accessible, and all surfaces and areas are navigable.
