Small changes in flour and method create entirely different textures and flavors.

A hands-on pizza and bread-making class at a restaurant in central Lucca where you prepare a full 3-course menu (classic breads, traditional pizza and focaccia with toppings, and a sweet pizza dessert), while learning authentic dough techniques from a local culinary expert. The class runs 4 hours and accommodates dietary needs with advance notice. Minimum age is 18.

The experience

What separates good dough from great dough? You'll find out by making it yourself. This class walks you through the craft of Italian bread and pizza from the ground up, starting with how whole wheat, semolina and Tuscan flour behave differently in your hands. A local chef teaches you the small adjustments (in hydration, fermentation, kneading) that shift a dough's texture and flavor, then you apply those techniques to build a full menu: a trio of breads, Ligurian focaccia, traditional pizza topped with mozzarella, Parma ham, mushrooms and spicy salami, and a sweet pizza finished with seasonal fruit or melted chocolate.

The class happens at a welcoming restaurant in Lucca's historic center, so you're working in a real kitchen where locals eat, not a tourist studio. You make everything from scratch, which means your hands are in the dough for the whole 4 hours. There's no watching a demo and taking notes. By the end, you've built and baked each course, and you eat what you've made right there, tasting how your choices in technique shaped the final dish.

  • a full 3-course menu you prepare and eat: breads, pizza, focaccia and sweet pizza.

Top questions

How much of the class is actually hands-on versus watching the chef work?

You make everything yourself from start to finish. The chef teaches and guides you through each step (dough mixing, shaping, topping, baking), but you're the one doing the work, not observing a demonstration.

Do I need any baking experience to take this class?

No prior experience is required. The class is designed for beginners. The chef teaches authentic techniques from the beginning and walks you through each stage of dough-making and baking.

What exactly do I make and eat during the 4 hours?

You prepare a full 3-course menu: a trio of breads made with whole wheat, semolina and Tuscan flour; Ligurian focaccia and traditional pizza with toppings like mozzarella, Parma ham, mushrooms and spicy salami; and a sweet pizza with seasonal fruit or melted chocolate. You bake and eat everything you make.

Can the class accommodate dietary restrictions or allergies?

Yes. The restaurant is designed to tailor the experience to dietary needs and restrictions. Let them know in advance, and they'll adapt the menu and ingredients to suit your preferences.

Is the restaurant accessible if I use a wheelchair?

Yes. The restaurant is fully wheelchair accessible, with accessible transportation options and all areas and surfaces designed for wheelchair use.
