The experience
You start at your hotel with a pickup from Nicola, who drives you to a handful of local shops (a vegetable grocer, a butcher, a cheese vendor), where you'll buy the ingredients for the cooking class. The market tour lasts about thirty minutes and moves through the neighborhood where Nicola's family lives, so you see what his favored vendors stock and how locals actually shop for a meal. Then you head to his parents' home.
The cooking class runs about two hours in their kitchen. Nicola's mother Lia, who does not speak English, teaches you to make three dishes from scratch using family recipes passed down through generations: Cilento pizza or handmade fusilli in the Cilento style, a meat sauce (ragu), and a vegetable dish like eggplant parmigiana or stuffed peppers. Nicola translates and walks you through the techniques and the reasoning behind them: how Southern Italian cooking works, not just what to do. You handle the dough, the sauce, the vegetables. This is hands-on instruction, not a demonstration.
When the cooking is done, you sit down at the kitchen table with Nicola and his parents to eat what you made, along with fresh fruit, local wine, and limoncello. The meal is the end of the class, not a separate event tacked on. You're eating in their home, with them, after a morning of work together.

Is this one for you?Book this if you want to learn to cook, not just watch a demonstration. You're making the pasta, the sauce, the vegetables with your hands, in a working kitchen, with a family teaching you recipes they've used for generations. The market tour first means you understand where the ingredients come from and how locals shop, so cooking becomes part of a real day in the neighborhood, not a staged class.
