The Experience
We were already elbow-deep in flour when our chef, Marco, told us we were kneading too gently—he laughed and mimed “stronger!” like an Italian grandma. The kitchen was warm, windows cracked for a breeze that carried faint street sounds and the smell of basil. I’d never made pasta from scratch before (unless you count that one sad attempt during lockdown), but Marco’s hands moved so confidently it felt contagious. He kept saying “piano piano”—slowly, slowly—which I guess is the only way dough listens.
I didn’t expect shaping ravioli to be so fiddly. My first one looked more like a pillow than anything elegant, but nobody minded. There was this easy chatter around the table—some folks from London, a couple from Brazil—and Marco told stories about his nonna’s kitchen in Florence while pouring us more wine (it never seemed to run out). When we finally got to the tiramisu part, the espresso hit me right in the nose—so sharp and rich. I tried to say “mascarpone” properly; he grinned but didn’t correct me.
Sitting down together at the end felt less like a class and more like a family meal. The pappardelle was silky with tomato and basil sauce, and my ravioli—lumpy as it was—tasted way better than I’d expected. The tiramisu was creamy but somehow light? Still not sure how that works. We swapped tips for recreating everything at home (Marco emails you the recipes), but honestly, it’s the laughter and floury mess I remember most. I still think about that table sometimes when I make coffee in the morning.
