The Experience
You arrive at the farm outside Assisi and walk straight into the vineyards. The vines are planted between olive groves, and the guide points out which parcels are organic certified and how the altitude here — we're in the foothills — shapes what grows. It's not a long walk, maybe thirty minutes if you linger, but it's the thing most people skip when they book a wine tasting in Umbria. You get to see where the bottles come from before you taste them.
Back at the tasting room — or outside if the weather holds — four wines arrive with food. The first is paired with hot bruschetta, tomatoes and olive oil still warm. Then come the cheeses: a mix of local producers, some soft, some aged, each one matched to a different wine from the Assisi DOC or Umbria IGT. The farm makes its own jam and balsamic vinegar, and those come out too. The guide talks through each pairing, but it's not a lecture. You're tasting, asking questions, trying combinations. If it's too hot or too cold to sit outside, you move into the tasting room.
