"The soil here remembers what we did fifty years ago," Marco from the Tili Family says as you walk between the vines, and you realize he's not being poetic — he's talking about the nitrogen cycle, the cover crops, the years it took to stop using anything synthetic. The winery sits in the hills above Assisi, and the tour starts with a walk through the vineyards and olive groves, no rushing, just the guide pointing out which parcels are which age, which ones face which direction. Then you move inside for the tasting itself. Five organic wines — some Assisi DOC, some Umbria IGT — arrive one at a time, each one paired with something warm: bruschette with organic extra virgin olive oil and fresh tomatoes, a spread of local cheeses and salami with jam, and at the end, umbrian biscotti (tozzetti, they call them) with a sweet wine for dunking. The guide walks you through what you're tasting — the tannins, the acidity, why this one tastes like it does — and you're not pretending to understand; you actually do, because someone who grows the grapes is explaining them.
