The experience
Nicole teaches in an informal way, telling the story of how curry arrived in the Caribbean with Indian indentured servants after slavery ended, and how each island developed its own special blend of spices. You'll learn the history and health value of curry, plus shortcuts to recreate the same menu at home whenever you want. The class covers curry chicken (with tofu for vegetarians), Dhal Puri roti, roasted pumpkin, spinach with coconut milk, white rice, and coconut custard tarts for dessert.
The meal starts with coconut crisps or plantain chips, then moves through the three courses on the veranda with views of the Caribbean Sea. Coffee and tea are included, along with all the recipes you'll need to cook this same menu back home. Nicole keeps the class small, a minimum of four people, so the kitchen doesn't get crowded and everyone gets real attention.
Bring any dietary requirements or allergies to her attention when you book, since the menu shifts with what's in season. If your group is smaller than four, you can join an existing class, or Nicole will move your booking to another day that works.
