The Experience

You sort of tumble off the street into this cozy spot in Hanoi — it’s not fancy, but there’s something about the yellow walls and the clatter of cups that feels like you’re being let in on a secret. Our instructor, Linh, smiled right away and started telling us how egg coffee was invented during a milk shortage (I didn’t know that). The smell of strong coffee hit me before anything else, kind of earthy and sweet at the same time. There were just five of us, so it felt easy to ask questions or just mess up without feeling weird about it.

Linh showed us how to beat the egg yolk until it turned this pale yellow foam — she made it look so easy, but my arm got tired fast. She laughed and said everyone struggles the first time. I tried saying “cà phê trứng” and totally butchered it; she grinned and corrected me gently. We each made our own cup, pouring thick coffee through the creamy topping. The texture surprised me — almost like dessert, but not too sweet unless you wanted it that way. I kept sneaking little spoonfuls before even taking a sip.

Afterwards we got these crispy spring rolls to eat with our egg coffee (never thought those would go together but… actually works). The group chatted about which brands to buy for home — Linh scribbled down her favorites on a napkin for us. I still think about that first sip, sitting there while scooters buzzed outside and everyone’s voices mixed together. It was just an hour but somehow felt longer, in a good way.
