The experience

The tour starts with pickup from your hotel or the Opera House, then heads straight into the neighborhoods where locals actually eat. Your first stop is a coconut juice mixed with pineapple or kumquat jam to cool you down before the ride. From there the motorbike takes you to Le Van Tam Park for green papaya salad with beef jerky and crispy fritters, then through local neighborhoods where you try grilled bananas in sweet coconut milk and Saigon Bo Kho, a rich Southern-style beef stew. The pace is built around eating and riding in turns. You are not standing in a market watching a demonstration.

Ho Thi Ky Market, the city's largest wholesale flower market, is where the tour picks up speed. You ride through the flower stalls, then eat Khmer-style grilled beef, Vietnamese pizza, and authentic Bánh Mì while drinking Saigon beer. Chinatown (Chợ Lớn) comes next with Bánh Xèo, a crispy Mekong-style shrimp and pork crepe that is harder to find outside the neighborhood.
