The route moves through District 10, the city's oldest box apartment from the Vietnam War, the largest flower market in Ho Chi Minh City, and the back alleys of Cholon—the part of the city that sits apart from the main tourist loop. At each stop, you step off the bike and into a street stall, a local market or a hidden hangout where the guide orders the next dish.
The nine dishes come in sequence across the four hours: vegan bún bò (the famous Saigon noodle soup, adapted for vegan), grilled bananas with coconut milk, coconut juice mixed with kumquat jam, fresh spring rolls with soybean paste, lotus salad with fried and fresh tofu, vegan bánh mì, and chè mâm (Vietnamese sweet soup for dessert). At one stop in District 10, you make your own bánh mì and sweet soup by hand. The menu shifts slightly depending on the day and what the local stalls have ready, so no two tours taste exactly the same.
