The morning starts at Cho Ben Thanh market, where your local chef guides you through the stalls to understand how meats, produce and spices are chosen for traditional Vietnamese cooking. You'll see how the market works as part of daily life here (the vendors, the cuts, the seasonal picks), and handle the ingredients yourself instead of reading about them. This isn't a quick walk-through. The tour is built into the class so you understand where each component of your meal comes from before you cook it.

Back at the cooking station, you get your own workspace and all the ingredients laid out. The chef leads you through a three-course menu of classic Vietnamese dishes, teaching the flavors, spices and techniques that span the country's culinary regions. You're not watching a demonstration. You're making each dish yourself, with the chef guiding the steps. Vegetarian options are available if you request them when you book.
