You arrive at Aonang Thai Cookery School and the instructor, Sow, walks you through the market ingredients laid out on the counter — fresh basil, lemongrass, galangal — and suddenly the spice combinations that seemed mysterious when you ordered takeout start to make sense. The class stays small, never more than twelve people, so you're not standing in the back watching someone else's wok.
The structure is simple: you choose five dishes across the categories — a soup, a stir-fry, an appetizer, a salad, a curry paste or curry, and a dessert — and then you cook them. Not watch someone cook them. You get your own station, your own wok, and Sow moves between students offering guidance without hovering. The ingredients come fresh from the local market that morning, no artificial coloring or flavoring in the kitchen, and you learn the technique for each one as you go: how to bruise the basil to release the oils, when the oil should smoke, how to know when a curry paste is ready. If you want everything vegetarian, vegan, spicy or mild, the school adjusts without fuss. You're not locked into a set menu.
After you finish cooking, you eat what you made. That break from the beach, that meal you prepared yourself in a kitchen that smells like real Thai cooking, changes how you think about the whole thing.
