The experience

The class runs four hours and starts with you choosing which recipes to focus on: hot and sour soup, pad thai, green curry, papaya salad, or one of several other classics. A Thai chef walks you through each dish step by step, showing you how to layer flavors and handle the herbs and spices that define the cuisine. You'll learn to make curry paste from scratch, which is where most of the technique lives. The rest follows from there. The school provides all the tools and ingredients, so you show up and start cooking.

You pick the time that fits your day: morning, afternoon, or evening sessions run most days. The class takes place just outside Krabi town, and hotel transfers from Ao Nang, Krabi Town, and nearby beaches are included in the price. Just let them know where you're staying. A minimum of two people is needed to run the class, and the maximum is twelve, which keeps the instruction personal. All dishes can be made vegetarian, vegan, spicy or mild to match what you actually want to eat.

When the cooking finishes, you sit down and eat everything you made. You'll take home a recipe book and a certificate, so the skills and the proof of the day both travel with you. Solo travelers can arrange their own transfer or pay a set fee depending on which area of Krabi they're in.
