The Experience

You walk into a cooking school in Suan Phlu, Sathon, and within a minute you're standing in the fresh market next door—the same one where the school sources everything. No bus ride, no detour. The market tour is built into every class, morning through evening, which means you're not just learning recipes; you're learning where the ingredients come from and how to pick them yourself. The instructor walks you through the stalls, pointing out the difference between Thai basil and regular basil, showing you which chilies go into which curry, and you're already thinking about flavor before you step back into the kitchen.

Then you cook. Four dishes in two hours—something like green curry with chicken, pad thai with shrimp, a soup (tom yum or tom kha depending on the day), and mango sticky rice. You make curry paste from scratch, which means grinding and pounding, not opening a jar. The recipes go home with you in writing, so the whole thing doesn't disappear the moment you leave Bangkok. Water is included, and you eat everything hot, right after you finish cooking it. The class runs every day of the week with a different menu rotation, so if you're there Monday you get papaya salad and pad thai; Thursday brings larb gai and panang curry instead.

The school sits near Silom—close enough to BTS Saint Louise (Exit 1), Chongnonsi (Exit 2), or Sala Daeng (Exit 2) that you can get there by public transport or a quick taxi ride.
