Our guide, Noi, waved us over with a big grin — I could smell the street food carts firing up nearby. “Ready for the market?” she asked, and off we went. The wet tiles were a little slippery (I almost lost a flip-flop), but the colors in that fresh market woke me right up: piles of tiny green limes, chilies so red they looked fake, fish flapping in buckets. Noi handed me a bunch of lemongrass to sniff — honestly, it smelled like summer after rain.
I tried to say “galangal” properly (Li laughed when I tried to say it in Mandarin — probably butchered it), and then we picked out everything for our Thai cooking class. It was loud in there — vendors shouting prices, someone chopping something fast behind us. Back at the Silom Thai Cooking School, we washed up and got aprons on. The kitchen was bright but not fancy; fans spinning overhead and windows cracked open to let in city sounds. We started with Tom Yum Soup — I never realized how much lime leaf goes into that until today.
Noi showed us how to pound curry paste by hand (my arm’s still tired). Pad Thai noodles sizzled on the wok while someone’s green curry turned out way too spicy — she just shrugged and laughed it off. There was sticky rice steaming in little baskets by the window; mangoes waiting on the counter. We all ate what we cooked around one long table, trading stories about home. I kept thinking about that first bite of mango sticky rice — sweet, salty coconut cream on top — and how different it tasted because I made it myself. Maybe that’s why I remember this day more than most tours.
