The Experience

The first thing that hit me was the smell—lemongrass and something sharp, maybe kaffir lime, right as we stepped into Pak Khlong Talad. Our guide, Pim, waved us over to a stall piled high with tiny green eggplants. She picked one up and split it open with her thumbnail so we could smell it (I still think about that scent). The market was noisy in a friendly way—vendors calling out, buckets of ice clinking, someone laughing behind us. I tried asking for cilantro in Thai and got a grin from the seller; definitely didn’t say it right. We wandered past so many flowers I lost count. The white lotuses looked almost too perfect to touch.

Back at the kitchen, it felt like stepping into someone’s home—cool air, soft light bouncing off metal bowls. Pim handed us aprons and we got started on Tom Yum Goong. She showed us how to bruise lemongrass with the side of a knife (“not too hard!”), and my first attempt sent herbs flying off the board. Everyone laughed—even me. We made Pad Thai from scratch (the noodles stick if you’re not careful), then Som Tam—grating green papaya is harder than it looks—and finally mango sticky rice. The coconut milk tasted different when we made it ourselves; richer somehow.

Lunch was just everyone sitting around the table eating what we’d cooked—no fuss, just good food and stories about where people were from. Afterward, Pim taught us how to fold white lotus petals so they looked like little sculptures. Mine wasn’t perfect but she said it had “character,” which I’ll take. Walking out into the heat again with my folded lotus in hand felt oddly special—like I’d actually learned something real about Bangkok that morning.
