Mamas of Zanzibar: Cook Traditional Dishes in a Local Home
Market, kitchen, lunch: a morning cooking the food Zanzibari families eat
Mamas of Zanzibar is a hands-on cooking class in a local home where you learn to prepare traditional Zanzibari dishes, visit the nearby fish market, and eat what you cook for lunch. A guide who lives on the island teaches you in English or Dutch, and the class runs about four hours from 9am, with time built in to explore the neighbourhood and try henna painting if you want.

The experience
You arrive at 9am and meet your guide: one of the Zanzibari women who runs the class from her home. She walks you through the day's menu and the routine of her household, then heads out to the local fish market with you. The market is where the day's ingredients come from: fresh fish, cassava leaves, coconut, banana. You pick what you need and carry it back to the kitchen.
From 10:30 to 11:30 you cook. Your guide teaches you how to prepare grounded cassava leaves in coconut served with rice, sweet banana in coconut, and fresh fish. The dishes she makes for her own family. You do the work: chopping, grinding, cooking over the stove. She watches, corrects, explains the why behind each step. The recipes you learn are written down for you to take home. Between cooking and lunch, there's a window to walk around the neighbourhood, visit a small boutique shop, or sit for henna painting if that interests you.
At 12:15 you eat lunch: what you cooked, served with a glass of juice and traditional Swahili sweets. The class ends by 1pm. The schedule can shift depending on the group and what the day brings (your guide may add an activity or adjust the timing), so there's room for the experience to unfold as it does.

Is this one for you?Small groups work best here since you're cooking in a home kitchen, not a commercial space, and the guide adjusts the day to the people in front of her, so if you want an intimate, unrushed morning where you actually learn rather than watch, this fits that need.
