The experience

The zipline portion takes you through the rainforest canopy on a series of lines strung between platforms. You wear a helmet, gloves, harness and hairnet, all provided, and the guide walks you through the setup before you clip in. Once you're moving through the trees, the plantation spreads out below you. This part lasts roughly an hour and sets up what comes next.

After you're back on solid ground, the guide takes you through the working plantation itself. You'll see how sugar cane and cocoa were processed in the 18th century, watch the methods still used for rum and chocolate making, and taste both products made on the estate. The plantation sits on the same property as the zipline, so there's no transport between stops. The guide explains the history and the craft as you move through, and the tasting happens at the plantation itself.

Lunch is served at the estate's rustic restaurant, built by hand on the property. It's a creole meal: locally sourced and cooked on-site. This is where the morning ends, so you're eating where you've been the whole time. Public transportation options are available nearby if you need to arrange your own way to Morne Coubaril.
