The experience
You start in a peaceful village home with a clay kitchen and coconut-leaf roof, surrounded by the garden where the ingredients come from. A local cook walks you through each step of preparing several dishes: yellow or white rice, lake fish curry simmered in coconut milk, ambarella curry made from a tropical fruit, banana blossom, pumpkin curry, kathurumurunga mallum with fresh greens, and coconut sambal. The menu shifts with what's in season and what the cook decides to teach that day.
The hands-on part is the point. You'll grind your own spices using a miris gala, the traditional stone grinder, and smell the aroma as the spices break down. You scrape fresh coconut with a hiramanaya (a skill every Sri Lankan home cook knows), and pick a coconut straight from the tree to see how it moves from garden to pot. You cook over a wood-fired stove using clay pots and coconut-shell firewood, the same way the cook's grandmothers did. The smoke and heat are real. The flavor is different from what a modern stove produces.
When the cooking is done, you sit down to eat the lunch or dinner you made, served with fresh curd and treacle and ripe papaya to finish. You arrive to a refreshing local drink, and the whole experience, from garden to table, takes about two and a half hours. The guide speaks English and the class welcomes children from age five.
