The market stop takes maybe thirty minutes, and then you walk eight minutes to the kitchen where the actual work begins.
The cooking class itself is where the technique clicks. You'll build the salmorreta—that rich, slow-cooked base of tomato and seafood stock—and learn why the socarrat (the crispy rice crust at the bottom) is the thing people actually fight over. Your chef walks you through it step by step: how to use albufera rice from Valencia's own fields, how much saffron, when to stop stirring so the rice can crust without burning.
