The experience

How do you actually learn to cook Moroccan food? Not from a video, from someone who grew up making it. You meet at a central location in Marrakech and walk to a traditional family home, where the kitchen is set up and your host is ready to teach. The setup matters: you're not watching a demonstration or following along in a restaurant kitchen. You're standing in the space where this food gets made every day, learning the techniques and the reasoning behind them as you go.

The meal you prepare together includes fresh salads with tomatoes, onions, cucumber and olive oil; a tagine with your choice of lamb, beef, fish, chicken or vegetables; and a fruit salad for dessert. You start with Moroccan tea and pastries, then move into the kitchen. While the tagine simmers (which gives you time to breathe), you sit down with your host to hear stories about Moroccan daily life and take photos. This is also when you can ask about the spice shop visit: if you want to see where the ingredients come from, your host can take you to a local spice market before or after the class, at no extra cost.

By the end of the three hours, the food is ready and you eat together at the family table. The guide speaks English, French, German or Arabic, so the instruction and the conversation happen in your language. You leave with the recipes, the confidence to make these dishes at home, and the memory of having cooked them in the place where they belong.
