The Experience

I’ll be honest — I was nervous when we followed Abdo through the narrow Marrakech streets. There’s this moment where you step off the busy road and suddenly you’re in a quiet courtyard, the air full of that sweet minty smell (I think it was the tea — or maybe orange blossom?). Abdo just grinned and handed us tiny glasses before we’d even sat down. I tried one of the little pastries (feqqas?) and immediately regretted not grabbing more. We were strangers five minutes ago but it already felt like someone’s cousin had come to visit.

The kitchen was smaller than I expected, but somehow everyone fit. Abdo’s sister showed me how to chop tomatoes for salad — she laughed at my “technique” (which is fair). The tagine part was slower; lots of spices I couldn’t name, everything layered by hand. He told us which stalls in the souk have the best saffron, and why his mom always uses preserved lemon. At some point someone put on music from their phone and we all ended up singing along, badly. It was hot near the stove but nobody seemed to mind.

While things simmered, we sat around swapping stories about daily life here — weddings, football teams, what people actually do during Ramadan. I asked about the blue tiles in their courtyard and Abdo said his grandfather picked them out decades ago. The food tasted different when we finally ate together — richer somehow? Or maybe it’s just that you’re eating with people who call this city home. I still think about that first spoonful of tagine sometimes.
