The experience

I’ll admit, I was nervous about showing up at someone’s house in Marrakech for a cooking class. It felt way more personal than just another market tour. But the second we ducked out of the dusty street and into Fatima’s tiled courtyard, everything softened. Her mother handed us mint tea before we’d even washed our hands. The smell of fresh herbs and something sweet frying drifted from the kitchen, and I caught myself grinning like an idiot.

Fatima had us rolling up our sleeves almost immediately. We chopped onions (I cried more than I expected), ground spices by hand, and tried to pronounce “khobz” properly: Li laughed when I tried to say it in Arabic. Probably butchered it. The kitchen was full of little noises: sizzling oil, her sister singing softly in the background, the scrape of knives on wood. At one point Fatima let me taste a pinch of cumin straight from her palm (earthy and sharp) before we tossed it into the tagine.

Lunch was kind of chaotic in the best way. We sat on low cushions around a big shared plate, scooping up food with bread while Fatima’s dad told stories about his childhood in the Atlas Mountains. Someone put on music and suddenly there were pastries being passed around and everyone trying on fezzes for photos. It wasn’t polished or perfect. I think that’s why I still think about that afternoon when I taste cinnamon now.
