The Experience

The kitchen smelled like warm semolina and fresh yeast the moment I walked in. Our host, Fatima, greeted us with a quick smile and handed out aprons—mine was a bit too big but that just made it feel more real. The table was already set up with bowls of flour, tiny glasses for tea, and a battered old teapot that looked like it had stories to tell. We started with msemen, folding the dough into neat squares while Fatima showed us how to get those crispy layers just right. My first one came out lopsided but she laughed and said that’s how you know it’s homemade.

Next up: harcha and batbout. The harcha sizzled on the griddle, filling the air with a nutty smell that reminded me of street stalls near Jemaa el-Fnaa. Batbout was trickier—getting the puff just right took some patience (and a gentle nudge from Fatima). While everything cooked, we learned how to pour mint tea from high above the glass so it foamed up properly. There was something calming about watching the steam curl in the cool morning air. When we finally sat down together, tearing off pieces of our own bread and dunking them in honey, it felt like sharing breakfast at a friend’s house rather than a class.
