The Experience
The garden sits far enough from the city that you can actually hear yourself think. You arrive by pickup from your hotel, and the first thing Chief Tarik does is walk you through the rows — tomatoes, peppers, herbs, whatever's ready that day — and you collect what you'll cook with your own hands. It's not a performance kitchen in a riad; it's a working farm with a cooking space attached, and that changes everything about how the lesson feels.
The cooking class itself moves through four or five dishes depending on the day: lamb tajine with prunes, chicken tajine with ginger and turmeric, a fresh tomato and pepper salad the Moroccan way, a vegetable tajine, couscous. Tarik walks you through each one, showing you the technique and the reasoning behind it — why the spices go in when they do, how the slow cook works, what makes the flavors land right. You're not watching from a stool; you're doing the work, and he's there correcting your knife grip or telling you when to add the next ingredient. The kitchen has everything you need, and by the end you've made an actual meal, not a demonstration.
Lunch is what you cooked, eaten in the garden or inside depending on the weather. Beverages are included — mint tea, water, whatever goes with the meal. If you need vegetarian dishes or have dietary requirements, you tell them when you book and they adjust the menu. The whole thing runs about four to five hours from pickup to drop-off, and you get a certificate at the end, which is a nice small thing to take home. Groups stay small — minimum two people per booking — so it never feels crowded or rushed.
