The experience
The class starts at a local market in Oaxaca City, where you and your instructor shop together for the freshest seasonal produce, herbs and spices that define Oaxacan cooking. You'll learn what makes each ingredient essential to the cuisine as you pick what you need. From there, you move to her home kitchen to prepare every dish completely from scratch. Throughout the cooking, she shares family techniques, cooking secrets and cultural traditions preserved across generations: no prior experience required, and you choose your menu's complexity level when you book.
Once everything is ready, you gather around the table to eat the meal you've created together. The spread includes the three dishes you cooked, traditional Oaxacan snacks, fresh aguas frescas, local beers, artisanal mezcals and mezcal cocktails with traditional curados. The experience wraps with a drive back to downtown Oaxaca and a full set of recipes so you can recreate these dishes at home.
