The experience
The class starts with the story behind mixology, where it came from, how it has changed, and how bartenders in Oaxaca are reinterpreting drinks for their own communities. From there, you move into the materials: a wide variety of organically grown products ranging from fruits, vegetables, herbs, aromatic plants, flowers and branches. The instructor walks you through each one, explaining its history and how it shapes the flavor of a drink. You get a bartender's apron and access to the full toolkit (shakers, jiggers, strainers and other instruments), so you can handle them yourself.
The work is about imagination more than rules. You'll learn the basic bartender movements, how to move a shaker, and how a cocktail comes together: mezcal or another spirit, juice, syrup, ice and presentation. The class encourages you to experiment within that structure, building drinks that are classic, or juice-forward, or built around a single ingredient. By the end you'll have tasted cocktails made by everyone in the group and walked away with the technique to make them again.
