The experience
Jordan Heritage Restaurant started by tracing the origins of mansaf, lamb with yogurt, back to remote villages connected to the Great Arab Revolt. That search turned into a mission: the nonprofit has now collected and documented 95 dishes from all regions of Jordan, each one prepared by local women using authentic spices and traditional methods. The menu changes to reflect what is in season and what the kitchen has sourced that day, but you will always eat food made by hand in the restaurant's own kitchen, not plated elsewhere and reheated.
Your afternoon or evening unfolds over four hours from hotel pickup. The private transfer is air-conditioned and sized to your group. You travel with a soft drink and bottled water included, plus tea or coffee made with freshly picked herbs from the restaurant's garden. At the table, each course arrives with an explanation: where the dish comes from, which communities cook it, what the original condiments are, and how the layers or techniques make it work. A sample menu includes mtabbal (roasted aubergine whipped with yogurt and tahini) followed by magloobeh, a three-layer rice, vegetable and meat dish served upside down, and haitalyeh, a traditional milk pudding topped with ghee and pistachios.
The restaurant itself is wheelchair accessible, and the vehicle is equipped for passengers with mobility needs. Contact the operator a day ahead to confirm pickup and to note any dietary requirements or requests for infant car seats or strollers.
